Serving Size: 12 regular size muffins
I've always loved muffins. Now I love making them homemade for my friends and family. I like using Whole Grain Wheat Flour or Buckwheat flour for a little more fiber. :-) I recommend using a combo of different types of flours to fit your palette. If you don't like your muffins semi-healthy you can use plain white flour. It will work just the same and probably turn out more fluffy. My family loves these and I hope your family will enjoy as well!
Muffin Ingredients:
1 cup of White Flour
1 cup of Whole Grain Wheat Flour or (Buckwheat flour)
3/4 or 1 cup of Brown Sugar (You can use the lesser amount of sugar for less sweet muffins. I sometimes use combinations of either 1/2 cup of honey or white sugar. Feel free to use your own preference)
1 tbsp of Baking Powder
1/2 tsp of Salt
1/2 cup of milk
1/2 cup of oil
1 egg
1 1/4 Cup of chopped blueberries, blackberries, strawberries, or raspberries (your favorite combo is best!)
Topping Ingredients:
1 tsp of Cinnamon
1/4 tsp of baking powder
1/4 Flour
1/4 White or Brown Sugar
2 Tbsp of melted butter
Instructions:
1. Preheat oven to 400 degrees
2. Grease Muffin pan or use paper cups
3. Mix flour, sugar, honey egg, baking powder, oil, milk and salt
** If muffin mixture seems too thick or dry (like cookie dough) you can add another 1/4 cup of milk
4. Fold in fruit
5. Pour muffin mixture into muffin pan
6. Mix up topping ingredients in medium sized bowl
** Topping mixture should look slightly clumpy
7. Sprinkle Topping mixture over muffin mixture
8. Bake 15-20 mins depending on your oven. They should be golden brown. When you stick a toothpick in and it comes out clean you know they are ready. :-)
